Coconut and Almond Granola

Granola can be incredibly versatile; it can be sweet or spicy; you can serve it as cereal or drizzle over yoghurt. The only problem is finding a granola that isn’t chockfull of refined sugars and additives! That’s why I’m offering this super-easy recipe for homemade granola.

Ingredients

Coconut & Almond Granola

  • 250g rolled oats
  • 75g of pure maple syrup
  • 20g natural almond butter
  • 40g of flaked almonds
  • 2 tbsps of pumpkin seeds
  • 1.5 tbsps of desiccated coconut
  • 25g of coconut flakes
  • 2.5 tsps of cinnamon
  • 1 tsp of vanilla extract

How to make this Coconut and Almond Granola (Oil & Refined Sugar Free)

1. To get started on this super easy granola recipe, preheat your oven to 180oC. Then add your coconut flakes to a pot along with one tablespoon of maple syrup and half a teaspoon of cinnamon. Heat the coconut gently for a couple of minutes to caramelise slightly and allow the flakes to sweeten. Once the flakes have become slightly translucent, remove from the heat.

2. Next, add your oats to a bowl along with the desiccated coconut, almond flakes, pumpkin seeds and cinnamon and stir to combine. Once combined, add the caramelised coconut flakes and stir through the mixture.

3. Now begin adding your wet ingredients. Start by stirring through the almond butter - make sure you give it a good stir and coat the dry ingredients to avoid any lumps. Now add your maple syrup 25g at a time - stir throughly after adding each 25g to ensure the syrup coats all of the dry ingredients. Finally add your vanilla extract and, once again, stir through well.

4. Now cover an oven tray with some baking paper and spread the granola over the tray in an even layer then place in the oven to bake. The granola should bake for around 25 minutes or until completely golden - stir the mix halfway through to get an even, crunchy bake.

Store your granola in an airtight container and enjoy!
