Lemon Matcha Iced Tea

I have always loved iced tea for as long as I can remember. I used to love really sugary iced tea but over the years I’ve come to realise how delicious unsweetened iced tea can be too. This iced tea is made with water, matcha, lemon juice and mint. I brew my lemon matcha iced tea in a pot on the hob with the lemon juice and mint, and whisk the matcha powder to get the lumps out. I then let it cool off before putting it in the fridge for a few hours to get become cold.

Ingredients

Lemon Matcha Iced Tea

  • 4 cups water
  • 2 tsp matcha powder
  • Juice of ½ lemon
  • 1 sprig of mint leaves
  • Optional: 2 tsp coconut palm sugar

How to make Lemon Matcha Iced Tea

1. On low heat, whisk all of the ingredients in a medium sized pot. Bring to the boil, and ensure there are no clumps of matcha powder. Strain out the mint leaves. Transfer to a jug, and refrigerate for a few hours until cold. Add ice cubes to cool the iced tea off faster.
