Nut-free, Apricot Granola (Vegetarian)

This delicious recipe works perfectly as healthy breakfast option. The recipe allows you to use fresh ingredients, plus, keep unwanted, refined sugar at a low. I also designed this recipe to be nut-free (but you can substitute some of the seeds for nuts if you’d prefer) plus it makes 10 portions, so you’ll always have a healthy breakfast available for when you need it.

Ingredients

  • 250g oats
  • 100g pumpkin seeds
  • 2 tbsp cinnamon powder
  • 30ml melted coconut oil
  • 30ml honey
  • 25g dessicated coconut
  • 25g raisins
  • 30g dried apricots

How to make Nut-free, apricot granola

1. Combine the oats, pumpkin seeds, cinnamon, coconut oil and honey in a bowl and mix thoroughly.

2. Add to a parchment paper lined baking tray and bake at 180⁰C for 12 minutes.

3. Add the desiccated coconut, raisins and dried apricots, mix through, and bake for another 12 minutes.

4. Leave to stand for 30 minutes untouched.

5. Serve with a dollop of Greek yoghurt and pack the rest into a sealed jar to store.
