Tiger Prawn & Watermelon Salad

I find watermelon addictive in the summer months and I also find it perfect for weight loss especially when served with the prawns. No need for more carbohydrate with this dish. Remember that you don’t absorb the cholesterol from prawns into your bloodstream.

Ingredients

Tiger Prawn & Watermelon Salad

  • 350g cooked tiger prawns
  • 1 medium sized watermelon, cut in half with all the flesh scooped out
  • 50g sunflower seeds
  • 50g pine nuts
  • Handful fresh basil leaves
  • Handful fresh mint leaves

For the dressing:

  • 1 tbsp low salt soy sauce
  • 1 tbsp lime juice
  • 1 tbsp light olive oil
  • 1 tbsp rice vinegar
  • 1 tbsp runny honey
  • 1 chilli, finely sliced
  • 3 spring onions, finely sliced

How to make Tiger Prawn & Watermelon Salad

1. Start by making the dressing. Mix all the dressing ingredients together in a bowl.

2. Now pile the prawns and watermelon on to your serving dish, sprinkle over the sunflower seeds and pine nuts and just before serving pour over the dressing.
This dish is best eaten on the day it is made, before the watermelon loses all of its juice.
